Try this: alt+o -> IRC -> Messages -> Check UTF-8

In the View/Font dialog try UTF-8 display and decode.

Moreover, please check of this option is enabled: mirc options (alt+o) -> IRC -> Messages -> Font linking
And try the "GrayWorld.mts" theme as we use a unicode font in this theme.

...Is there a way to unload theme completely so I could test if that theme is the problem?...

Well, there is a way to test this. But you cannot "unload" the theme. If the problem is in the theme, we have to fix this in some of the next versions if possible.

Ok, the only way to test this is if you deactivate all scripts:
Open the script editor (alt+r), switch to the tab "Remote", klick the menu "Listen" and uncheck all 3 entries. Then klick ok and test if it works now. Remember: Now all scripts (including themes and Gamers.IRC functions) are disabled. So please turn it back on. This way we could find out where the problem is.
